Description

Ingredients

  • 1/4 tsp salt
  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream, chilled
  • 1/4 cup powdered sugar
  • 1 cup cherry pie filling or fresh cherries, chopped
  • Grated chocolate or chocolate shavings
  • More cherry pie filling or fresh cherries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 10×15-inch jelly roll pan and line it with parchment paper.
  2. In a bowl, sift together the flour, cocoa powder, baking powder, and salt.
  3. In a separate bowl, whisk the eggs and sugar until thick and pale.
  4. Add oil and vanilla extract, mixing well.
  5. Gently fold in the dry ingredients until combined.
  6. Pour the batter into the prepared pan and spread it evenly.
  7. Bake for 10-12 minutes or until the cake springs back when touched.
  8. While the cake is still warm, invert it onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper and roll the cake up with the towel. Let it cool completely.
  9. In a chilled bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.
  10. Once the cake has cooled, unroll it and spread a generous layer of whipped cream over the surface.
  11. Add chopped cherries or cherry pie filling and gently roll it up without the towel.
  12. Garnish with grated chocolate and more cherries on top for a beautiful presentation. Slice and enjoy!

Notes

For best results, ensure all ingredients are at room temperature. Do not open the oven door while baking and be gentle when rolling the cake.
