- 4 eggs
- 1 cup sugar
- 1 cup flour
- 1/4 cup cocoa powder
- 1/4 cup lemon zest
- 1/2 cup butter
- 1 tsp baking powder
- 1 cup chocolate ganache
- 2 tbsp lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, beat the eggs and sugar together until fluffy.
- Mix in the flour, cocoa powder, lemon zest, melted butter, baking powder, and lemon juice until everything is well combined.
- Pour the mixture into a lined baking sheet and bake for about 10-12 minutes.
- Once baked, roll the warm cake with a towel to shape it, then unroll it carefully.
- Spread chocolate ganache evenly over the cake.
- Re-roll the cake and chill it in the refrigerator for 2 hours.
- Once chilled, coat the outside with the remaining chocolate ganache and serve.
Notes
Garnish with lemon zest or fresh berries for extra flair. Store leftovers in the refrigerator for 3-4 days.
