Ingredients

  • 4 eggs
  • 1 cup sugar
  • 1 cup flour
  • 1/4 cup cocoa powder
  • 1/4 cup lemon zest
  • 1/2 cup butter
  • 1 tsp baking powder
  • 1 cup chocolate ganache
  • 2 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, beat the eggs and sugar together until fluffy.
  3. Mix in the flour, cocoa powder, lemon zest, melted butter, baking powder, and lemon juice until everything is well combined.
  4. Pour the mixture into a lined baking sheet and bake for about 10-12 minutes.
  5. Once baked, roll the warm cake with a towel to shape it, then unroll it carefully.
  6. Spread chocolate ganache evenly over the cake.
  7. Re-roll the cake and chill it in the refrigerator for 2 hours.
  8. Once chilled, coat the outside with the remaining chocolate ganache and serve.

Notes

Garnish with lemon zest or fresh berries for extra flair. Store leftovers in the refrigerator for 3-4 days.
