- 4 eggs
- 1 cup sugar
- 1 cup flour
- 1/4 cup cocoa powder
- 1/4 cup lemon zest
- 1/2 cup butter, melted
- 1 tsp baking powder
- 1 cup chocolate ganache
- 2 tbsp lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, beat together the eggs and sugar until fluffy.
- Mix in the flour, cocoa powder, lemon zest, melted butter, baking powder, and lemon juice until well combined.
- Pour the batter into a lined baking sheet and bake for about 10-12 minutes.
- Once baked, roll up the cake with a clean towel while warm.
- Unroll the cake, spread with warm chocolate ganache, then re-roll it carefully.
- Chill the rolled cake in the refrigerator for about 2 hours.
- Coat the outside of the cake with the remaining ganache before serving.
Notes
Let the cake cool completely before spreading ganache to prevent melting. For serving, consider adding powdered sugar or whipped cream on top.
