- 1/4 cup granulated sugar

- 1 teaspoon vanilla extract
- 3 large eggs
- Gel food coloring in various colors (pink, purple, blue, yellow, orange)
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- Gel food coloring for whipped topping (optional)
- Assorted sprinkles and edible gold pearls for decoration
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix in rainbow sprinkles if desired, and press into the bottom of a 9×13-inch baking pan lined with parchment paper. Bake for 10 minutes and let cool slightly.
- In a large bowl, beat softened cream cheese until smooth. Gradually add 1 1/4 cups of sugar and blend well. Add vanilla extract and eggs one at a time, mixing until just combined.
- Divide the cheesecake batter into bowls and add gel food coloring to each. Stir until mixed evenly.
- Spoon each colored batter over the cooled crust and swirl with a skewer or knife, taking care not to overmix.
- Bake for 40-50 minutes until edges are set and center jiggles slightly. Turn off the oven, crack the door, and let cool for 1 hour before cooling completely on a wire rack. Refrigerate for at least 4 hours or overnight.
- In a cold bowl, beat heavy cream with powdered sugar and vanilla until stiff peaks form. Color with gel food coloring if desired.
- Slice chilled cheesecake into bars and decorate with colored whipped topping, assorted sprinkles, and edible gold pearls. Serve or refrigerate until ready to enjoy.
Notes
Use room temperature cream cheese for a smoother batter. For extra flavor, different colors can be used to match themes.
