- 1 1/2 cups crushed graham crackers
- 1/4 cup white sugar
- 6 tablespoons melted butter
- 1 beaten egg white (optional)
- 3 (8-ounce) blocks of full-fat cream cheese, softened
- 1 cup white sugar
- 1 cup sour cream, room temperature
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 3 large eggs, room temperature
- 3/4 cup passion fruit curd
Instructions
- Preheat the oven to 350°F (175°C). Spray a 9-inch springform pan with cooking spray and line the bottom with parchment paper.
- In a bowl, mix the crushed graham crackers, sugar, and melted butter until evenly moist. Press the crumbs into the prepared pan.
- Bake the crust for 10 minutes. Optionally, brush it with beaten egg white and bake for an additional 3-5 minutes for a crisper crust.
- Reduce the oven temperature to 250°F (121°C). Wrap the outside of the springform pan with an oven bag and secure, then wrap tightly in aluminum foil.
- In a large mixing bowl, beat the softened cream cheese and sugar on medium speed until creamy, about 2-3 minutes.
- Add the sour cream, vanilla extract, and salt, mixing until just combined.
- Beat in the eggs one at a time, mixing after each addition until just incorporated.
- Pour the cream cheese filling into the prepared crust and swirl in the passion fruit curd using a butter knife.
- Place the wrapped springform pan in a roasting pan and fill with boiling water until halfway up the sides of the springform pan.
- Bake for 1 hour and 30 minutes, then turn off the oven and let sit in the closed oven for 3 hours.
- After 3 hours, remove from the oven, cover with plastic wrap, and refrigerate for at least 8 hours or overnight before serving.
Notes
For best results, ensure cream cheese, eggs, and sour cream are at room temperature. Store in an airtight container in the fridge for 5-7 days.
