Ingredients

  • 1 1/2 cups crushed graham crackers
  • 1/4 cup white sugar
  • 6 tablespoons melted butter
  • 1 beaten egg white (optional)
  • 3 (8-ounce) blocks of full-fat cream cheese, softened
  • 1 cup white sugar
  • 1 cup sour cream, room temperature
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 3 large eggs, room temperature
  • 3/4 cup passion fruit curd

Instructions

  1. Preheat the oven to 350°F (175°C). Spray a 9-inch springform pan with cooking spray and line the bottom with parchment paper.
  2. In a bowl, mix the crushed graham crackers, sugar, and melted butter until evenly moist. Press the crumbs into the prepared pan.
  3. Bake the crust for 10 minutes. Optionally, brush it with beaten egg white and bake for an additional 3-5 minutes for a crisper crust.
  4. Reduce the oven temperature to 250°F (121°C). Wrap the outside of the springform pan with an oven bag and secure, then wrap tightly in aluminum foil.
  5. In a large mixing bowl, beat the softened cream cheese and sugar on medium speed until creamy, about 2-3 minutes.
  6. Add the sour cream, vanilla extract, and salt, mixing until just combined.
  7. Beat in the eggs one at a time, mixing after each addition until just incorporated.
  8. Pour the cream cheese filling into the prepared crust and swirl in the passion fruit curd using a butter knife.
  9. Place the wrapped springform pan in a roasting pan and fill with boiling water until halfway up the sides of the springform pan.
  10. Bake for 1 hour and 30 minutes, then turn off the oven and let sit in the closed oven for 3 hours.
  11. After 3 hours, remove from the oven, cover with plastic wrap, and refrigerate for at least 8 hours or overnight before serving.

Notes

For best results, ensure cream cheese, eggs, and sour cream are at room temperature. Store in an airtight container in the fridge for 5-7 days.
