Description

Delicious and easy-to-make chicken bites caramelized in a sweet and smoky glaze, served over warm brown rice.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 1 tablespoon olive oil
  • 1/3 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon smoked paprika
  • 2 cups cooked brown rice
  • Fresh chopped parsley or green onions (for garnish)

Instructions

  1. In a bowl, toss the chicken pieces with salt, pepper, and cornstarch until evenly coated.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6-8 minutes, turning occasionally, until golden brown and cooked through.
  3. In a small bowl, whisk together soy sauce, honey, brown sugar, garlic, rice vinegar, and smoked paprika.
  4. Pour the sauce into the skillet with the chicken. Stir to coat and let it simmer for 3-5 minutes until the sauce thickens and caramelizes, coating the chicken evenly.
  5. Serve the glazed chicken bites over a bed of warm brown rice.
  6. Garnish with freshly chopped parsley or green onions and serve immediately.

Notes

For extra crispy chicken, pan-fry the chicken pieces without the sauce first, then add the sauce later. Feel free to adjust sweetness with honey.
