Delicious and easy-to-make chicken bites caramelized in a sweet and smoky glaze, served over warm brown rice.

- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon cornstarch
- 1 tablespoon olive oil
- 1/3 cup soy sauce
- 1/4 cup honey
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 tablespoon rice vinegar
- 1 teaspoon smoked paprika
- 2 cups cooked brown rice
- Fresh chopped parsley or green onions (for garnish)
Instructions
- In a bowl, toss the chicken pieces with salt, pepper, and cornstarch until evenly coated.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6-8 minutes, turning occasionally, until golden brown and cooked through.
- In a small bowl, whisk together soy sauce, honey, brown sugar, garlic, rice vinegar, and smoked paprika.
- Pour the sauce into the skillet with the chicken. Stir to coat and let it simmer for 3-5 minutes until the sauce thickens and caramelizes, coating the chicken evenly.
- Serve the glazed chicken bites over a bed of warm brown rice.
- Garnish with freshly chopped parsley or green onions and serve immediately.
Notes
For extra crispy chicken, pan-fry the chicken pieces without the sauce first, then add the sauce later. Feel free to adjust sweetness with honey.
