Ingredients

  • 1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/2 cup soy sauce (low sodium preferred)
  • 1/2 cup brown sugar
  • 1/4 cup water
  • 1 teaspoon cornstarch mixed with 2 teaspoons water (slurry)
  • 1/4 teaspoon crushed red pepper flakes (optional, for heat)
  • 3 green onions, sliced
  • Sesame seeds for garnish

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the chicken pieces and cook until browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add garlic and ginger, and sauté for about 1 minute until fragrant.
  4. Stir in the soy sauce, brown sugar, water, and red pepper flakes (if using). Bring the sauce to a simmer.
  5. Slowly whisk in the cornstarch slurry to thicken the sauce. Stir constantly until the sauce thickens, about 2 minutes.
  6. Return the chicken to the skillet and toss well to coat it evenly with the sauce. Cook for an additional 2 minutes so the chicken absorbs the flavors.
  7. Remove from heat, sprinkle with sliced green onions and sesame seeds before serving.

Notes

Serve over steamed rice or with noodles. Adjust sweetness and heat to your liking.
