Description

A hearty and healthy one-pan meal combining lean ground beef, sweet potatoes, and fresh zucchini, perfect for busy weeknights.


Ingredients

  • 1 lb lean ground beef
  • 2 cups sweet potatoes, peeled & diced
  • 1 medium zucchini, sliced into half-moons
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt & pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, cook the ground beef over medium-high heat until browned and crumbly. Season with salt, pepper, and smoked paprika.
  2. Stir in garlic and onion, cooking until soft and fragrant.
  3. Push beef to one side, add olive oil and sweet potatoes. Cook for 10–12 minutes, stirring occasionally, until fork-tender.
  4. Mix in the zucchini and let it cook for 5 more minutes.
  5. Sprinkle with chopped parsley and serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave until warm.
