Ingredients

- 1 lb lean ground beef
- 2 cups sweet potatoes, peeled & diced
- 1 medium zucchini, sliced into half-moons
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp cumin
- Salt & pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, cook the ground beef over medium-high heat until browned and crumbly. Season with salt, pepper, and smoked paprika.
- Stir in garlic and onion, cooking until soft and fragrant.
- Push beef to one side, add olive oil and sweet potatoes. Cook for 10–12 minutes, stirring occasionally, until fork-tender.
- Mix in the zucchini and let it cook for 5 more minutes.
- Sprinkle with chopped parsley and serve hot.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave until warm.
