Instructions
- Preheat your waffle maker.

- In a separate bowl, whisk the eggs, milk, olive oil, and vanilla extract.
- Combine the wet ingredients with the dry ingredients until just mixed.
- Pour the batter into the preheated waffle maker and cook until golden brown, about 4-5 minutes.
- Serve the waffles warm, topped with fresh arugula.
Notes
