Description

Delicious and healthy sweet potato skins filled with savory spinach, mushrooms, and feta cheese.


Ingredients

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 cup fresh spinach
  • 1 cup mushrooms, diced
  • 1/2 cup feta cheese, crumbled
  • Salt and pepper to taste
  • Garlic Parmesan Dip ingredients

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roast the sweet potatoes for 45-60 minutes until they are soft.
  3. Allow the sweet potatoes to cool, then cut them in half and scoop out a portion of the flesh.
  4. Brush the skins with olive oil and season with salt and pepper.
  5. Bake the skins for an additional 10-15 minutes until they are crispy.
  6. In a skillet, sauté the spinach and mushrooms until they are soft.
  7. Fill the skins with the sautéed mushroom and spinach mixture, then top with crumbled feta cheese.
  8. Bake for another 5-10 minutes until the cheese is slightly melted.
  9. Prepare the garlic parmesan dip by mixing mayonnaise, parmesan cheese, and garlic powder.
  10. Serve the sweet potato skins warm with the dip on the side.

Notes

Best served warm; can be stored in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for about 10 minutes.
