Delicious and healthy sweet potato skins filled with savory spinach, mushrooms, and feta cheese.

- 4 medium sweet potatoes
- 1 tablespoon olive oil
- 1 cup fresh spinach
- 1 cup mushrooms, diced
- 1/2 cup feta cheese, crumbled
- Salt and pepper to taste
- Garlic Parmesan Dip ingredients
Instructions
- Preheat the oven to 400°F (200°C).
- Roast the sweet potatoes for 45-60 minutes until they are soft.
- Allow the sweet potatoes to cool, then cut them in half and scoop out a portion of the flesh.
- Brush the skins with olive oil and season with salt and pepper.
- Bake the skins for an additional 10-15 minutes until they are crispy.
- In a skillet, sauté the spinach and mushrooms until they are soft.
- Fill the skins with the sautéed mushroom and spinach mixture, then top with crumbled feta cheese.
- Bake for another 5-10 minutes until the cheese is slightly melted.
- Prepare the garlic parmesan dip by mixing mayonnaise, parmesan cheese, and garlic powder.
- Serve the sweet potato skins warm with the dip on the side.
Notes
Best served warm; can be stored in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for about 10 minutes.
