- 1 scrawny sweet potato, diced
- 1/4 onion, diced
- Hot Tennessee Pride sausage, crumbled
- 1 egg
- Salt and pepper to taste
- Olive oil or butter for cooking
Instructions
- In a skillet, heat olive oil or butter over medium heat.
- Add the diced onion and cook until translucent.
- Add the diced sweet potato and cook until soft, stirring occasionally.
- Stir in the crumbled sausage and cook until browned.
- Meanwhile, in a separate pan, cook an egg to your liking (fried or poached).
- Once the hash is cooked, season with salt and pepper, and top with the egg.
- Serve hot, optionally with hot sausage gravy and biscuits.
Notes
For quicker cooking, use pre-cooked sausage. Adjust spices to taste, adding more vegetables for extra nutrients.
