Ingredients

  • 1/4 onion, diced
  • Hot Tennessee Pride sausage, crumbled
  • 1 egg
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat olive oil or butter over medium heat.
  2. Add the diced onion and cook until translucent.
  3. Add the diced sweet potato and cook until soft, stirring occasionally.
  4. Stir in the crumbled sausage and cook until browned.
  5. Meanwhile, in a separate pan, cook an egg to your liking (fried or poached).
  6. Once the hash is cooked, season with salt and pepper, and top with the egg.
  7. Serve hot, optionally with hot sausage gravy and biscuits.

Notes

For quicker cooking, use pre-cooked sausage. Adjust spices to taste, adding more vegetables for extra nutrients.
