- 1/2 lb ground beef
- 1 cup sweet potatoes, peeled and cubed
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/4 cup cucumber, chopped
- 1/4 cup sautéed spinach or greens
- 1/2 cup cottage cheese
- 1 tbsp olive oil
- Dash of hot sauce or sriracha (optional)
- Salt
- Pepper
- Smoked paprika
- Garlic powder
Instructions
- Preheat the oven to 425°F (220°C).
- Toss sweet potato cubes in olive oil, smoked paprika, garlic powder, salt, and pepper. Roast for 20–25 minutes until crispy and golden.
- In a skillet, cook ground beef until fully browned. Season with salt, pepper, and any taco-style spices you like.
- Dice red onion, chop cucumbers, and slice cherry tomatoes. Toss together with a drizzle of olive oil or balsamic vinegar.
- Lightly sauté spinach or your greens of choice with a touch of garlic and oil.
- In a large bowl, arrange the beef, sweet potatoes, cottage cheese, greens, and the fresh tomato-onion-cucumber mix. Top with hot sauce if desired.
Notes
Store leftovers in an airtight container for 3-4 days. Reheat in the microwave or on the stovetop.
