Description

Delicious and healthy fritters made with sweet potato and zucchini, perfect as a snack or side dish.


Ingredients

  • 1 medium sweet potato, grated
  • 1 medium zucchini, grated
  • 1/4 small onion, grated
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan
  • 1/2 tsp garlic powder
  • Salt and black pepper, to taste
  • 2 tbsp chopped chives
  • Olive oil, for frying

Instructions

  1. Place the grated sweet potato, zucchini, and onion in a clean towel and squeeze out the excess moisture.
  2. In a large bowl, combine the squeezed veggies, eggs, flour, Parmesan, garlic powder, salt, pepper, and chives. Stir until well mixed.
  3. In a skillet over medium heat, add a drizzle of olive oil.
  4. Drop spoonfuls of the batter into the hot oil. Flatten gently and cook for 3–4 minutes on each side until golden brown and crisp.
  5. Transfer the fritters to paper towels to drain excess oil. Serve warm with your favorite dip.

Notes

For added flavor, serve with ranch dressing, sour cream, or a tangy yogurt sauce. Ensure to squeeze out moisture to prevent sogginess.
