Ingredients

  • 1 cup graham cracker crumbs
  • 4 tablespoons butter, melted
  • 8 ounces cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup mashed sweet potatoes
  • 1/2 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1 large egg
  • Whipped cream (for topping)
  • Crumpled graham crackers (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). In a medium bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a 9-inch pie dish. Bake for 10 minutes until lightly golden. Set aside to cool.
  2. In a large bowl, beat the cream cheese and 1/2 cup sugar until smooth. Add vanilla and mix. Add eggs one at a time, mixing well. Pour into the cooled crust.
  3. In a separate bowl, mix the mashed sweet potatoes, 1/2 cup sugar, cinnamon, nutmeg, ginger, cloves, and one egg. Spread this mixture over the cream cheese layer.
  4. Bake for 50-60 minutes or until set and a knife inserted comes out clean. Let cool to room temperature, then refrigerate for at least 4 hours.
  5. Before serving, top with whipped cream and crumbled graham crackers.

Ensure cream cheese is well-softened for a smooth filling. Use fresh sweet potatoes for better flavor.
