Description

Ingredients

  • 1/2 lb ground beef
  • 1 medium sweet potato, cubed
  • 1 cup broccoli florets
  • 1/2 zucchini, chopped
  • 1 tbsp olive oil
  • Salt
  • Black pepper
  • Garlic powder
  • Optional: honey mustard or tahini sauce

Instructions

  1. Toss the sweet potato cubes in olive oil, salt, and pepper. Roast at 400°F (200°C) for 25–30 minutes until caramelized.
  2. In a skillet, cook the ground beef until browned, seasoning with garlic powder, salt, and black pepper.
  3. Lightly steam or sauté the broccoli and zucchini until just tender.
  4. In a large bowl, layer the roasted sweet potatoes, veggies, and seasoned beef.
  5. Finish with a drizzle of honey mustard, tahini, or your favorite sauce before serving.

Notes
