- 1 medium sweet potato, cubed
- 1 cup broccoli florets
- 1/2 zucchini, chopped
- 1 tbsp olive oil
- Salt
- Black pepper
- Garlic powder
- Optional: honey mustard or tahini sauce
Instructions
- Toss the sweet potato cubes in olive oil, salt, and pepper. Roast at 400°F (200°C) for 25–30 minutes until caramelized.
- In a skillet, cook the ground beef until browned, seasoning with garlic powder, salt, and black pepper.
- Lightly steam or sauté the broccoli and zucchini until just tender.
- In a large bowl, layer the roasted sweet potatoes, veggies, and seasoned beef.
- Finish with a drizzle of honey mustard, tahini, or your favorite sauce before serving.
