A delicious one-pan meal combining hearty beef and sweet potatoes, perfect for busy weeknights.
Ingredients

- 1 lb ground beef (lean preferred)
- 2 medium sweet potatoes, peeled and cubed
- 1 zucchini, sliced into half moons
- 1/2 onion, diced
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp chili powder
- Salt & pepper to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add cubed sweet potatoes to the skillet and sauté until they are slightly golden and fork-tender.
- Push the sweet potatoes to one side of the skillet, then add the ground beef. Cook until the beef is browned and fully cooked.
- Stir in the zucchini and diced onions. Cook until the vegetables are tender.
- Sprinkle in the smoked paprika, garlic powder, chili powder, salt, and pepper. Mix everything well.
- Top with fresh parsley and serve warm.
Notes
Serve hot with a side salad or warm bread. Top with sour cream or cheese for extra flavor.
