Description

A delicious one-pan meal combining hearty beef and sweet potatoes, perfect for busy weeknights.


Ingredients

  • 1 lb ground beef (lean preferred)
  • 2 medium sweet potatoes, peeled and cubed
  • 1 zucchini, sliced into half moons
  • 1/2 onion, diced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • Salt & pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add cubed sweet potatoes to the skillet and sauté until they are slightly golden and fork-tender.
  3. Push the sweet potatoes to one side of the skillet, then add the ground beef. Cook until the beef is browned and fully cooked.
  4. Stir in the zucchini and diced onions. Cook until the vegetables are tender.
  5. Sprinkle in the smoked paprika, garlic powder, chili powder, salt, and pepper. Mix everything well.
  6. Top with fresh parsley and serve warm.

Notes

Serve hot with a side salad or warm bread. Top with sour cream or cheese for extra flavor.
