- 1/2 cup butter, room temperature
- 1 2/3 cups sugar
- 2 eggs
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 3 cups diced & peeled apples (approximately 2 large apples)
- Optional: 1/4 cup chopped pecans or walnuts
- 1 1/3 cups brown sugar
- 2 tablespoons half & half
- 4 tablespoons butter
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan thoroughly.
- In a small bowl, sift together the flour, baking soda, salt, cinnamon, and nutmeg.
- In a large mixing bowl, cream together the butter and sugar. Add the eggs one at a time, stirring well after each addition. Stir in the vanilla extract.
- Gradually fold in the dry ingredients, then gently fold in the diced apples and nuts (if using).
- Pour the batter into the prepared pan and bake for 35-40 minutes.
- In a saucepan, combine the brown sugar, half & half, and butter over medium-low heat. Stir until the mixture is smooth.
- Pour the warm caramel over the baked cake and return it to the oven for an additional 10-15 minutes.
- Allow the cake to cool for 15 minutes before slicing. Serve warm or at room temperature, optionally with vanilla ice cream or whipped cream.
Notes
Use fresh, firm apples for best flavor. For variation, try adding ginger or cloves, or even a layer of cream cheese frosting.
