Description

A rich, chocolatey, and incredibly moist cake topped with a smooth chocolate ganache, perfect for any occasion.


Ingredients

  • 1¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1½ tsp baking powder
  • 1½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup heavy cream
  • 8 oz semisweet or dark chocolate, finely chopped
  • 1 tbsp unsalted butter (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Beat until well combined.
  4. Slowly pour in the boiling water and mix until the batter is smooth.
  5. Divide the batter evenly between the prepared pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. For the ganache, heat heavy cream in a saucepan until it begins to simmer. Pour over chopped chocolate and let sit for 2-3 minutes, then stir until smooth. Stir in butter if desired.
  8. Place one cake layer on a serving plate, spread ganache on top, add the second layer, and pour remaining ganache over the top. Decorate and let set for 20-30 minutes before serving.

Notes

Use room temperature ingredients and don’t overmix the batter after adding boiling water for the best results.
