Description
A rich, chocolatey, and incredibly moist cake topped with a smooth chocolate ganache, perfect for any occasion.

- 1¾ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1½ tsp baking powder
- 1½ tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup buttermilk
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 cup heavy cream
- 8 oz semisweet or dark chocolate, finely chopped
- 1 tbsp unsalted butter (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
- In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Beat until well combined.
- Slowly pour in the boiling water and mix until the batter is smooth.
- Divide the batter evenly between the prepared pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- For the ganache, heat heavy cream in a saucepan until it begins to simmer. Pour over chopped chocolate and let sit for 2-3 minutes, then stir until smooth. Stir in butter if desired.
- Place one cake layer on a serving plate, spread ganache on top, add the second layer, and pour remaining ganache over the top. Decorate and let set for 20-30 minutes before serving.
Notes
Use room temperature ingredients and don’t overmix the batter after adding boiling water for the best results.
