Description

A rich and decadent chocolate cake topped with a shiny chocolate ganache, perfect for any celebration.


Ingredients

  • 2 cups (250g) all-purpose flour
  • 2 cups (400g) granulated sugar
  • 3/4 cup (75g) unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup (240ml) whole milk (or buttermilk)
  • 1/2 cup (120ml) vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup (240ml) boiling water (or hot coffee)
  • 1 1/2 cups (9 oz/250g) semi-sweet chocolate chips or chopped chocolate
  • 3/4 cup (180ml) heavy cream
  • 1 tbsp unsalted butter (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add the milk, vegetable oil, eggs, and vanilla extract. Mix until combined.
  3. Carefully stir in the boiling water (or hot coffee). The batter will be thin. Divide the batter evenly between the prepared pans.
  4. Bake for 30-35 minutes, or until a toothpick comes out clean. Cool in pans for 10 minutes, then onto a wire rack to cool completely.
  5. For ganache, heat heavy cream until simmering. Pour over chocolate, let sit, then stir until smooth. Add butter if desired.
  6. Assemble the cake: Place one layer on a plate, spread a layer of ganache, top with the second layer, and pour ganache over the top.
  7. Serve with whipped cream or ice cream and store leftovers in an airtight container.

Notes

For extra moisture, use buttermilk and don’t skip the boiling water. Cool layers completely before frosting to prevent melting.
