Ingredients

- 2 tbsp yogurt (30 g)
- Dill to taste
- 3 eggs
- 1 kg potatoes (2.2 lbs)
- 100 g mozzarella (3.5 oz)
- 45 g butter (3 tbsp)
- 1 onion, diced
- 1 carrot, grated or diced
- 2 tbsp all-purpose flour (15 g), plus 1 cup (120 g)
- 400 g mushrooms (14 oz)
Instructions
- Preheat the oven to 180°C (350°F).
- Boil the potatoes until tender, then peel and mash them.
- In a skillet, melt the butter and sauté the onion, carrot, and mushrooms until soft.
- In a bowl, mix the mashed potatoes, sautéed vegetables, eggs, yogurt, mozzarella, dill, flour, and season with salt and pepper.
- Pour the mixture into a greased baking dish and bake for about 30-40 minutes, or until golden brown.
- Let it cool for a few minutes, then slice and serve.
Notes
Serve warm with a fresh salad or steamed green vegetables. Store leftovers in an airtight container in the refrigerator.
