A delightful casserole featuring zucchini, shredded chicken, and creamy cheese baked to perfection, perfect for summer meals.


Ingredients

  • 3 medium zucchini, thinly sliced
  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan
  • 1 cup sour cream or Greek yogurt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt & pepper, to taste
  • 1/2 cup breadcrumbs
  • 2 tbsp butter, melted
  • Optional: fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix together the shredded chicken, sour cream, cheddar cheese, Parmesan cheese, garlic powder, onion powder, and salt & pepper.
  3. In a greased baking dish, layer the zucchini slices and then add the chicken mixture on top, creating 2–3 layers as needed.
  4. Combine the breadcrumbs with melted butter and sprinkle this mixture over the top.
  5. Bake the casserole uncovered for 30–35 minutes until bubbly and golden.
  6. Let the casserole rest for 5 minutes, garnish with fresh parsley, and serve hot.

Notes

For a crunchier topping, consider broiling the casserole for the last few minutes of baking. Use fresh zucchini for the best flavor.
