Description

A delightful and hearty stew featuring summer squash and Italian sausage, perfect for any occasion.


Ingredients

  • 2 medium summer squash, peeled and cubed
  • 1/2 lb ground Italian sausage (mild or spicy)
  • 1 can (14.5 oz) diced tomatoes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme
  • Salt & pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the ground sausage and cook until it’s browned. If there is excess fat, remove it.
  2. Stir in the chopped onion and minced garlic. Sauté for 2–3 minutes until the onion is soft.
  3. Add the cubed squash, diced tomatoes, chicken broth, paprika, thyme, salt, and pepper to the pot.
  4. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and cook for 20–25 minutes, or until the squash is tender.
  5. Taste and adjust seasoning if needed. Serve hot, garnished with fresh chopped parsley.

Notes

For extra flavor, try using different herbs like basil or oregano. If you want a thicker stew, you can mash some of the squash before serving.
