Ingredients

- 2 medium summer squash, peeled and cubed
- 1/2 lb ground Italian sausage (mild or spicy)
- 1 can (14.5 oz) diced tomatoes
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 tbsp olive oil
- 1/2 tsp paprika
- 1/2 tsp dried thyme
- Salt & pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the ground sausage and cook until it’s browned. If there is excess fat, remove it.
- Stir in the chopped onion and minced garlic. Sauté for 2–3 minutes until the onion is soft.
- Add the cubed squash, diced tomatoes, chicken broth, paprika, thyme, salt, and pepper to the pot.
- Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and cook for 20–25 minutes, or until the squash is tender.
- Taste and adjust seasoning if needed. Serve hot, garnished with fresh chopped parsley.
Notes
For extra flavor, try using different herbs like basil or oregano. If you want a thicker stew, you can mash some of the squash before serving.
