- 3/4 cup graham cracker crumbs
- 1 1/2 tbsp sugar
- 1/4 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 1/2 cup sour cream
- 3/4 tsp pure vanilla extract
- 1/8 tsp kosher salt
- 2 large eggs
- 2 cups fresh cranberries
- 1 cup sugar (for syrup)
- 3/4 cup sugar (for rolling)
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 tsp pure vanilla extract
Instructions
- Preheat the oven to 325°F (165°C) and line a cupcake pan with cupcake liners. Combine graham cracker crumbs, 1 1/2 tbsp sugar, and melted butter in a medium bowl. Press about 1 tbsp of this mixture into each cupcake liner to form a crust.
- Beat softened cream cheese and 1/2 cup sugar until smooth. Add sour cream, 3/4 tsp vanilla, and 1/8 tsp salt, mixing until well combined. Incorporate the eggs one at a time, mixing just until combined. Fill each crust with 2 1/2 tbsp filling and bake for 17-22 minutes until the edges are set. Cool and refrigerate for a few hours.
- For the sugared cranberries, combine 1 cup sugar and 1 cup water in a small pot, simmering on low heat until dissolved. Coat cranberries in syrup, then roll in 3/4 cup sugar and set aside.
- Whip heavy cream with powdered sugar and 1 tsp vanilla until peaks form. Pipe onto each cheesecake bite.
- Top each bite with a few sugared cranberries and serve.
Notes
Store in an airtight container in the fridge for up to 5 days. Can be made ahead of time with the cheesecake and cranberries prepared separately.
