  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 3 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup all-purpose flour (for the crumble)
  • 1/2 cup granulated sugar
  • 1/4 cup cold unsalted butter, cut into small pieces
  • 1/4 cup granulated sugar (optional, for extra sweetness)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt for the sugar cookie base.
  3. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined, then gradually mix in the dry ingredients.
  5. Press the dough evenly into the prepared pan and bake for 12–14 minutes or until just set.
  6. For the lemonade filling, whisk together lemon juice, sugar, flour, salt, eggs, and melted butter until smooth, then pour over the baked base.
  7. For the crumble, mix flour and sugar in a bowl, cut in the cold butter until it resembles coarse crumbs, then sprinkle over the lemon layer.
  8. Return to the oven and bake for another 25–28 minutes or until the center is set and the top is golden.
  9. Cool completely in the pan, then refrigerate for at least 2 hours before cutting into bars.

Notes

Use freshly squeezed lemon juice for best flavor. Allow bars to cool completely before refrigerating.
