Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract (for the filling)
  • Fresh fruit, sprinkles, or chocolate shavings for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with baking cups.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy, about 2-3 minutes.
  4. Add the egg and vanilla extract to the butter mixture, mixing until fully combined.
  5. Gradually add the dry ingredients and mix until a dough forms.
  6. Roll the dough into 1-inch balls and press each ball into the mini muffin tin, forming a cup shape by pressing down in the center.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Remove from the oven and use the back of a spoon to reshape the centers if needed. Allow the cookie cups to cool completely.
  9. In a separate bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth.
  10. Spoon or pipe the filling into the cooled cookie cups.
  11. Top with your choice of garnishes such as fresh fruit, sprinkles, or chocolate shavings. Serve immediately or chill until ready to enjoy.
