- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1/3 cup powdered sugar
- 1 teaspoon vanilla extract (for the filling)
- Fresh fruit, sprinkles, or chocolate shavings for garnish
Instructions
- Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with baking cups.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy, about 2-3 minutes.
- Add the egg and vanilla extract to the butter mixture, mixing until fully combined.
- Gradually add the dry ingredients and mix until a dough forms.
- Roll the dough into 1-inch balls and press each ball into the mini muffin tin, forming a cup shape by pressing down in the center.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and use the back of a spoon to reshape the centers if needed. Allow the cookie cups to cool completely.
- In a separate bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth.
- Spoon or pipe the filling into the cooled cookie cups.
- Top with your choice of garnishes such as fresh fruit, sprinkles, or chocolate shavings. Serve immediately or chill until ready to enjoy.
