Ingredients

  • 1 package (16 oz) refrigerated sugar cookie dough (or homemade dough)
  • 1/4 cup granulated sugar (optional, for sprinkling)
  • 16 oz (2 packages) cream cheese (softened)
  • 3/4 cup granulated sugar
  • 1/4 cup sour cream
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract (optional)
  • Whipped cream (optional for topping)
  • Sprinkles (optional for topping)
  • Mini sugar cookies (optional for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan or line the bottom with parchment paper.
  2. Press the sugar cookie dough evenly into the bottom of the prepared pan to form the crust. Sprinkle granulated sugar over the dough if desired. Bake for 10-12 minutes until lightly golden. Remove from oven and allow to cool.
  3. In a large bowl, beat the cream cheese and sugar together until smooth and creamy. Add the sour cream, eggs, vanilla extract, and almond extract. Beat until fully combined and no lumps remain.
  4. Pour the cheesecake filling over the cooled sugar cookie crust, smoothing the top with a spatula. Bake for 40-45 minutes or until the edges are set and the center has a slight jiggle.
  5. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour.
  6. Transfer the cheesecake to the refrigerator and chill for at least 4 hours, preferably overnight.
  7. Once chilled, remove from the springform pan and transfer it to a serving plate.
  8. Pipe or spread whipped cream around the edges and decorate with sprinkles or mini sugar cookies.

Notes

For best results, make sure the cream cheese is softened for easy mixing and chill the cheesecake completely for the best texture.
