- 1 package (16 oz) refrigerated sugar cookie dough (or homemade dough)
- 1/4 cup granulated sugar (optional, for sprinkling)
- 16 oz (2 packages) cream cheese (softened)
- 3/4 cup granulated sugar
- 1/4 cup sour cream
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 tsp almond extract (optional, for added flavor)
- Whipped cream (optional)
- Sprinkles (optional)
- Mini sugar cookies (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan. Press the sugar cookie dough into the bottom to form a crust. Sprinkle granulated sugar on top if desired. Bake for 10-12 minutes until lightly golden. Let cool.
- In a mixing bowl, beat the softened cream cheese and 3/4 cup of granulated sugar until smooth and creamy. Add the sour cream, eggs, vanilla extract, and almond extract. Mix until well combined.
- Pour the cheesecake filling over the cooled cookie crust and bake for 40-45 minutes until the edges are set but the center has a slight jiggle. Turn off the oven and leave the cheesecake inside for 1 hour.
- Remove from the oven and refrigerate for at least 4 hours or overnight. Carefully remove from the springform pan.
- Top with whipped cream, sprinkles, or mini sugar cookies if desired.

For a smoother filling, ensure the cream cheese is at room temperature. Experiment with different extracts or toppings to customize the flavor.
