Ingredients

- 1 large bitter melon (or karela)
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper, to taste
- 1 tomato, chopped
- 1 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- Fresh coriander leaves, for garnish
Instructions
- Wash the bitter melon thoroughly. Cut it in half and remove the seeds. Slice it into thin pieces.
- Heat the olive oil in a pan over medium heat.
- Add chopped onions and sauté until golden brown.
- Stir in minced garlic and grated ginger, cooking for 1-2 minutes until fragrant.
- Add the sliced bitter melon and cook for about 5 minutes, stirring occasionally.
- Mix in chopped tomato, turmeric powder, cumin seeds, salt, and pepper. Stir well.
- Cover the pan and cook on low heat for another 10-12 minutes until the bitter melon is tender.
- Garnish with fresh coriander leaves before serving.
Notes
If bitter melon is too bitter, soak it in salty water for 30 minutes before cooking. Adjust spices according to taste.
