Description

A delightful dish featuring bitter melon, known for its ability to help control blood sugar levels while being packed with nutrients.


Ingredients

  • 1 large bitter melon (or karela)
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper, to taste
  • 1 tomato, chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • Fresh coriander leaves, for garnish

Instructions

  1. Wash the bitter melon thoroughly. Cut it in half and remove the seeds. Slice it into thin pieces.
  2. Heat the olive oil in a pan over medium heat.
  3. Add chopped onions and sauté until golden brown.
  4. Stir in minced garlic and grated ginger, cooking for 1-2 minutes until fragrant.
  5. Add the sliced bitter melon and cook for about 5 minutes, stirring occasionally.
  6. Mix in chopped tomato, turmeric powder, cumin seeds, salt, and pepper. Stir well.
  7. Cover the pan and cook on low heat for another 10-12 minutes until the bitter melon is tender.
  8. Garnish with fresh coriander leaves before serving.

Notes

If bitter melon is too bitter, soak it in salty water for 30 minutes before cooking. Adjust spices according to taste.
