Description

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder (preferably dark or black cocoa)
  • 1 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1/2 cup cocoa powder
  • 2 tsp vanilla extract
  • 45 tbsp milk or heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.
  2. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Add eggs, buttermilk, vegetable oil, and vanilla extract. Beat until smooth. Slowly stir in boiling water.
  4. Divide the batter evenly between the pans. Bake for 30–35 minutes, or until a toothpick comes out clean. Allow to cool for 10 minutes before transferring to a wire rack.
  5. To make the frosting, beat softened butter until creamy, sift in powdered sugar and cocoa powder, then beat until mixed. Add vanilla and milk, and beat until smooth.
  6. Assemble the cake by placing one layer on a plate, spreading frosting on top, adding the second layer, and frosting the sides and top.

Notes

Make sure all ingredients are at room temperature for a smoother batter. Don’t skip the boiling water step for a moist cake. Use high-quality cocoa powder for better flavor.
