- 1 3/4 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder (preferably dark or black cocoa)
- 1 1/2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 cup unsalted butter, softened
- 3 cups powdered sugar
- 1/2 cup cocoa powder
- 2 tsp vanilla extract
- 4–5 tbsp milk or heavy cream
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.
- In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- Add eggs, buttermilk, vegetable oil, and vanilla extract. Beat until smooth. Slowly stir in boiling water.
- Divide the batter evenly between the pans. Bake for 30–35 minutes, or until a toothpick comes out clean. Allow to cool for 10 minutes before transferring to a wire rack.
- To make the frosting, beat softened butter until creamy, sift in powdered sugar and cocoa powder, then beat until mixed. Add vanilla and milk, and beat until smooth.
- Assemble the cake by placing one layer on a plate, spreading frosting on top, adding the second layer, and frosting the sides and top.
Notes
Make sure all ingredients are at room temperature for a smoother batter. Don’t skip the boiling water step for a moist cake. Use high-quality cocoa powder for better flavor.
