- 200g red velvet cake mix
- 3 eggs
- 100ml vegetable oil
- 250ml buttermilk
- 200g cream cheese
- 100g butter
- 300g powdered sugar
- Purple food coloring
- 100ml heavy cream
- Chocolate chips for decoration
Instructions
- Preheat your oven to 175°C and prepare two greased cake tins.
- In a large bowl, mix the cake mix with eggs, vegetable oil, and buttermilk until well combined.
- Divide the batter evenly between the two prepared tins.
- Bake the cakes for 25-30 minutes, or until a toothpick comes out clean. Let them cool completely.
- To make the frosting, beat together the cream cheese, butter, and powdered sugar until smooth and creamy.
- Add purple food coloring to the frosting to achieve your desired shade and spread it between the cooled layers of cake.
- Whip the heavy cream until soft peaks form, then gently fold it into the frosting. Cover the entire cake with this fluffy frosting.
- Drizzle a purple ganache made from cream and colored chocolate over the top. Decorate with chocolate chips and chill the cake for at least 1 hour before serving.
Notes
If you want a more intense purple color, add more purple food coloring gradually. Store in an airtight container in the refrigerator for up to 3-4 days, or freeze layers separately for later use.
