- 200g red velvet cake mix
- 3 eggs
- 100ml vegetable oil
- 250ml buttermilk
- 200g cream cheese
- 100g butter
- 300g powdered sugar
- Purple food coloring
- 100ml heavy cream
- Chocolate chips for decoration
Instructions
- Preheat the oven to 175°C and prepare two cake tins with baking spray or parchment paper.
- In a large bowl, mix the red velvet cake mix, eggs, vegetable oil, and buttermilk until smooth.
- Divide the batter evenly between the two prepared cake tins.
- Bake in the oven for 25-30 minutes. Check with a toothpick to ensure the cakes are fully cooked. Once done, remove the cakes and let them cool completely.
- In another bowl, beat the cream cheese, butter, and powdered sugar together until creamy for the frosting.
- Add purple food coloring to the frosting until you achieve the desired shade, then spread the frosting between the cooled cake layers.
- Whip the heavy cream until soft peaks form, then gently fold it into the remaining frosting. Use this mixture to cover the top and sides of the cake.
- For an extra touch, drizzle a purple ganache made from cream and colored chocolate over the top.
- Decorate with chocolate chips and chill the cake in the refrigerator for about 1 hour before serving.
