Description

Stuffed Sweet Potato Boats are a delicious and healthy dish made with sweet potatoes and chickpeas, perfect for any meal or snack.


Ingredients

  • 2 medium sweet potatoes
  • 1 tsp olive oil
  • Salt and pepper, to taste
  • 1/2 cup canned chickpeas, rinsed and drained

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes and pierce them a few times with a fork.
  3. Rub the sweet potatoes with olive oil and sprinkle with salt and pepper.
  4. Place them on a baking sheet and bake for 45-60 minutes, until tender.
  5. Once cooked, remove from the oven and let cool slightly.
  6. Cut the sweet potatoes in half lengthwise and scoop out some flesh to create boats.
  7. In a bowl, mix the scooped sweet potato flesh with chickpeas.
  8. Fill the sweet potato halves with the chickpea mixture.
  9. Return to the oven for an additional 10 minutes.
  10. Serve warm.

Notes

Top with avocado, salsa, or yogurt for extra flavor. Make sure to pierce the sweet potatoes before baking to allow steam to escape.
