  • 1 lb ground beef
  • 1 cup uncooked rice (white or brown)
  • 3 bell peppers (red, yellow, green), chopped
  • 1 small onion, chopped
  • 2 cups shredded mozzarella and cheddar cheese blend
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 2 cups beef broth
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Cook the rice according to the package directions.
  3. In a skillet, cook the ground beef with the chopped onion and bell peppers until the beef is browned and the vegetables are tender. Drain any excess fat.
  4. Stir in the diced tomatoes, tomato sauce, beef broth, Italian seasoning, salt, and pepper. Let it simmer for 5 minutes.
  5. In a large bowl, combine the cooked rice and the beef mixture. Transfer this mix to the baking dish and sprinkle with cheese.
  6. Bake uncovered for 20 to 25 minutes until it is bubbly and the cheese is golden. Garnish with fresh parsley and serve!

Notes

Consider using turkey or chicken for a leaner option. Feel free to mix in other vegetables for added nutrition.
