Description

Crispy on the outside and creamy on the inside, these bite-sized mashed potato nests are perfect for entertaining or family dinners.


Ingredients

  • 4 medium Russet or Yukon Gold potatoes, peeled and cubed
  • 2 tbsp olive oil
  • 1/4 cup milk or cream
  • 1/4 cup grated Parmesan cheese
  • 1 egg yolk

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Boil the cubed potatoes in salted water until tender, about 15-20 minutes.
  3. Drain and return the potatoes to the pot.
  4. Add olive oil, milk or cream, Parmesan cheese, and egg yolk to the potatoes.
  5. Mash until smooth and well combined.
  6. Grease a muffin tin and spoon the mashed potato mixture into each cup, shaping it into a nest.
  7. Bake in the preheated oven for about 20-25 minutes or until golden brown.
  8. Remove from the oven and let cool slightly before serving.

Notes

Make sure to mash the potatoes well for a creamy texture. You can customize the nests by adding different cheeses, spices, or vegetables.
