Ingredients

- 4 medium Russet or Yukon Gold potatoes, peeled and cubed
- 2 tbsp olive oil
- 1/4 cup milk or cream
- 1/4 cup grated Parmesan cheese
- 1 egg yolk
Instructions
- Preheat the oven to 400°F (200°C).
- Boil the cubed potatoes in salted water until tender, about 15-20 minutes.
- Drain and return the potatoes to the pot.
- Add olive oil, milk or cream, Parmesan cheese, and egg yolk to the potatoes.
- Mash until smooth and well combined.
- Grease a muffin tin and spoon the mashed potato mixture into each cup, shaping it into a nest.
- Bake in the preheated oven for about 20-25 minutes or until golden brown.
- Remove from the oven and let cool slightly before serving.
Notes
Make sure to mash the potatoes well for a creamy texture. You can customize the nests by adding different cheeses, spices, or vegetables.
