Description

A delicious and wholesome dish perfect for any meal, combining sweet butternut squash with savory feta cheese, crispy bacon, and fresh spinach.


Ingredients

  • 2 medium butternut squashes, halved and seeds removed
  • 3 tbsp olive oil, divided
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1/2 cup cooked bacon, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Drizzle the cut sides of the butternut squashes with 2 tablespoons of olive oil, and season with garlic powder, salt, and pepper.
  3. Place the squashes cut side down on a baking sheet and roast for about 25-30 minutes until tender.
  4. In a skillet, heat the remaining tablespoon of olive oil over medium heat. Add spinach and cook until wilted.
  5. In a bowl, combine the cooked spinach, feta cheese, and bacon.
  6. Once the squashes are done, flip them cut side up and fill with the spinach mixture.
  7. Return to the oven and bake for an additional 10 minutes.
  8. Serve warm.

Notes

Use fresh ingredients for the best flavor. Adjust the amount of bacon or feta to your liking. Garnish with extra feta or fresh herbs for a beautiful presentation.
