- 2 medium butternut squashes, halved and seeds removed
- 3 tbsp olive oil, divided
- 1 tsp garlic powder
- Salt and pepper, to taste
- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 1/2 cup cooked bacon, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Drizzle the cut sides of the butternut squashes with 2 tablespoons of olive oil, and season with garlic powder, salt, and pepper.
- Place the squashes cut side down on a baking sheet and roast for about 25-30 minutes until tender.
- In a skillet, heat the remaining tablespoon of olive oil over medium heat. Add spinach and cook until wilted.
- In a bowl, combine the cooked spinach, feta cheese, and bacon.
- Once the squashes are done, flip them cut side up and fill with the spinach mixture.
- Return to the oven and bake for an additional 10 minutes.
- Serve warm.
Notes
Use fresh ingredients for the best flavor. Adjust the amount of bacon or feta to your liking. Garnish with extra feta or fresh herbs for a beautiful presentation.
