- 2 medium butternut squashes, halved and seeds removed
- 3 tbsp olive oil, divided
- 1 tsp garlic powder
- Salt and pepper, to taste
- Feta cheese, crumbled
- Fresh spinach
- Cooked bacon, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Place the halved butternut squashes cut-side up on a baking sheet. Drizzle with 1 tbsp olive oil and season with salt, pepper, and garlic powder.
- Roast in the oven for 30-35 minutes, or until tender.
- In a bowl, combine the crumbled feta, fresh spinach, and cooked bacon.
- Scoop out a bit of the squash flesh to make room for the filling.
- Fill the hollowed squash with the feta, spinach, and bacon mixture.
- Drizzle with the remaining olive oil and return to the oven for an additional 10-15 minutes.
- Serve warm.

Best served warm; garnish with additional feta cheese or fresh herbs. Pairs well with a salad or crusty bread.
