Ingredients

  • 2 medium butternut squashes, halved and seeds removed
  • 3 tbsp olive oil, divided
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • Feta cheese, crumbled
  • Fresh spinach
  • Cooked bacon, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the halved butternut squashes cut-side up on a baking sheet. Drizzle with 1 tbsp olive oil and season with salt, pepper, and garlic powder.
  3. Roast in the oven for 30-35 minutes, or until tender.
  4. In a bowl, combine the crumbled feta, fresh spinach, and cooked bacon.
  5. Scoop out a bit of the squash flesh to make room for the filling.
  6. Fill the hollowed squash with the feta, spinach, and bacon mixture.
  7. Drizzle with the remaining olive oil and return to the oven for an additional 10-15 minutes.
  8. Serve warm.

Notes

Best served warm; garnish with additional feta cheese or fresh herbs. Pairs well with a salad or crusty bread.
