- 2 cups cooked rice
- 1 cup corn (fresh, frozen, or canned)
- 1/2 cup diced red onion
- 1/2 cup chopped cilantro
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- In a skillet, heat olive oil over medium heat. Add the diced chicken, chili powder, paprika, garlic powder, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- In a large bowl, combine the cooked rice, corn, red onion, cilantro, and lime juice. Mix well.
