- 2 boneless skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp cumin
- Salt & pepper, to taste
Instructions
- Preheat your grill or skillet over medium-high heat.
- In a bowl, mix together the olive oil, smoked paprika, garlic powder, cumin, salt, and pepper.
- Coat the chicken breasts with the spice mixture until they are well covered.
- Grill or cook the chicken for 6-7 minutes per side until fully cooked.
- Once done, remove the chicken from the heat and let it rest for a few minutes before slicing it.
- Prepare the rice according to package instructions and set aside.
- Serve the grilled chicken over the rice and top with street corn if desired.
Notes
Add fresh cilantro, lime wedges, or a drizzle of your favorite sauce for enhanced flavors. Store leftovers in an airtight container in the refrigerator for up to 3 days.
