Description

A creamy and cheesy casserole that combines the flavors of street corn with tender chicken, perfect for a family dinner.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 can (15 oz) corn, drained
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 1/2 cups shredded mozzarella (or Monterey Jack)
  • 1/2 cup crumbled cotija or feta cheese
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt & black pepper, to taste
  • 2 tbsp chopped cilantro (plus more for garnish)
  • Juice of 1/2 lime

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine chicken, corn, sour cream, mayo, 1 cup shredded cheese, cotija, seasonings, lime juice, and cilantro. Mix until evenly combined.
  3. Transfer mixture to a greased 9×9 baking dish or oven-safe skillet.
  4. Top with the remaining shredded cheese.
  5. Bake for 20–25 minutes until bubbly and golden brown on top.
  6. Garnish with extra cilantro and serve warm.

Notes

For added flavor, consider grilling the corn before adding it to the casserole. You can use rotisserie chicken for quick preparation.
