A creamy and cheesy casserole that combines the flavors of street corn with tender chicken, perfect for a family dinner.

- 2 cups cooked shredded chicken
- 1 can (15 oz) corn, drained
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 1/2 cups shredded mozzarella (or Monterey Jack)
- 1/2 cup crumbled cotija or feta cheese
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- Salt & black pepper, to taste
- 2 tbsp chopped cilantro (plus more for garnish)
- Juice of 1/2 lime
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine chicken, corn, sour cream, mayo, 1 cup shredded cheese, cotija, seasonings, lime juice, and cilantro. Mix until evenly combined.
- Transfer mixture to a greased 9×9 baking dish or oven-safe skillet.
- Top with the remaining shredded cheese.
- Bake for 20–25 minutes until bubbly and golden brown on top.
- Garnish with extra cilantro and serve warm.
Notes
For added flavor, consider grilling the corn before adding it to the casserole. You can use rotisserie chicken for quick preparation.
