A delightful homemade ice cream combining sweet strawberries with rich vanilla bean flavor, perfect for hot days or whenever you crave something refreshing.

- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 vanilla bean (or 1 tbsp pure vanilla extract)
- 1/2 tsp salt
- 1 1/2 cups fresh strawberries, hulled and chopped
- 1/4 cup granulated sugar (for strawberry swirl)
- 1 tbsp lemon juice
Instructions
- Make the Ice Cream Base: In a large bowl, whisk together heavy cream, milk, sugar, and salt. Split the vanilla bean and scrape out the seeds. Stir them into the mixture (or add vanilla extract). Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions (about 20-25 minutes).
- Prepare the Strawberry Swirl: In a saucepan over medium heat, combine strawberries, sugar, and lemon juice. Cook for 5-7 minutes, stirring occasionally, until the mixture thickens slightly. Let cool.
- Assemble the Ice Cream: Once the ice cream has finished churning, transfer it to a freezer-safe container. Gently swirl in the strawberry mixture, being careful not to overmix.
- Freeze & Serve: Cover and freeze for at least 4 hours or until firm. Scoop into bowls or cones and enjoy!
Notes
Use ripe strawberries for the best flavor. For a stronger vanilla taste, add more vanilla extract or seeds. Let the ice cream base chill for smoother texture.
