Description

A refreshing and creamy homemade ice cream that combines the sweet flavor of ripe strawberries with rich vanilla.


Ingredients

Scale
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 vanilla bean (or 2 tsp pure vanilla extract)
  • A pinch of salt
  • 1 1/2 cups fresh strawberries (chopped)
  • 1/4 cup sugar
  • 1 tsp lemon juice

Instructions

  1. In a saucepan, cook strawberries, sugar, and lemon juice over medium heat until soft and syrupy (about 10 minutes). Let it cool completely.
  2. In a bowl, whisk together heavy cream, milk, sugar, and salt. Scrape the vanilla bean pod and stir in the seeds (or use vanilla extract).
  3. Pour the mixture into an ice cream maker and churn until thick and creamy (20-25 minutes). Gently fold in the cooled strawberry swirl.
  4. Transfer the mixture to a container, cover, and freeze for at least 4 hours.
  5. Serve in cones or bowls and enjoy!

Notes

For best flavor, use ripe strawberries. If you don’t have an ice cream maker, stir every 30 minutes in a shallow dish until frozen.
