A refreshing and creamy homemade ice cream that combines the sweet flavor of ripe strawberries with rich vanilla.
Ingredients

- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 vanilla bean (or 2 tsp pure vanilla extract)
- A pinch of salt
- 1 1/2 cups fresh strawberries (chopped)
- 1/4 cup sugar
- 1 tsp lemon juice
Instructions
- In a saucepan, cook strawberries, sugar, and lemon juice over medium heat until soft and syrupy (about 10 minutes). Let it cool completely.
- In a bowl, whisk together heavy cream, milk, sugar, and salt. Scrape the vanilla bean pod and stir in the seeds (or use vanilla extract).
- Pour the mixture into an ice cream maker and churn until thick and creamy (20-25 minutes). Gently fold in the cooled strawberry swirl.
- Transfer the mixture to a container, cover, and freeze for at least 4 hours.
- Serve in cones or bowls and enjoy!
Notes
For best flavor, use ripe strawberries. If you don’t have an ice cream maker, stir every 30 minutes in a shallow dish until frozen.
