Ingredients

- 1 cup heavy cream
- 1/2 cup sugar
- 8 oz mascarpone cheese
- 1 tsp vanilla extract
- 1 cup sliced fresh strawberries
- 1/2 cup strawberry jam
- 1 cup brewed coffee, cooled
- 24 ladyfinger cookies
- 2 tbsp cocoa powder
Instructions
- In a mixing bowl, whip the heavy cream and sugar together until soft peaks form.
- Gently fold in the mascarpone cheese and vanilla extract until well combined.
- In a separate bowl, combine the coffee and strawberry jam.
- Dip the ladyfinger cookies into the coffee mixture briefly.
- In a 9×9 inch dish, create a layer of dipped ladyfingers on the bottom.
- Spread half of the mascarpone mixture over the ladyfingers.
- Layer half of the sliced strawberries on top.
- Repeat the layers with the remaining ingredients, finishing with mascarpone on top.
- Dust with cocoa powder.
- Refrigerate for at least 240 minutes before serving.
Notes
Use fresh strawberries for the best flavor. Do not soak the ladyfingers too long in coffee to prevent them from getting too soggy.
