A delightful dessert that combines the rich creaminess of cheesecake with fresh strawberries for a visually stunning treat.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/3 cup melted unsalted butter
  • 3 (8 ounce) packages cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1/2 cup sour cream
  • 1 pound fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar (for topping)
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press this into a 9-inch springform pan.
  3. Beat softened cream cheese and 1 1/2 cups sugar until smooth. Mix in vanilla extract and eggs, one at a time. Finally, stir in sour cream.
  4. Pour cream cheese filling over the crust in the springform pan.
  5. In a saucepan, combine sliced strawberries, 1/4 cup sugar, and lemon juice. Simmer over medium heat.
  6. Mix cornstarch with a tablespoon of water and stir into the strawberry mixture. Cook until thickened then remove from heat.
  7. Gently swirl some of the strawberry mixture into the cheesecake filling.
  8. Bake for 55-65 minutes, until the center is slightly jiggly. Cool completely and refrigerate for at least 4 hours or overnight.
  9. Spread the remaining strawberry topping over the cheesecake and garnish with fresh strawberry slices.

Notes

Make sure your cream cheese is softened to room temperature for a smooth filling. Store leftovers in the refrigerator for 3 to 5 days.
