- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/3 cup melted unsalted butter
- 3 (8 ounce) packages cream cheese, softened
- 1 1/2 cups granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1/2 cup sour cream
- 1 pound fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar (for topping)
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press this into a 9-inch springform pan.
- Beat softened cream cheese and 1 1/2 cups sugar until smooth. Mix in vanilla extract and eggs, one at a time. Finally, stir in sour cream.
- Pour cream cheese filling over the crust in the springform pan.
- In a saucepan, combine sliced strawberries, 1/4 cup sugar, and lemon juice. Simmer over medium heat.
- Mix cornstarch with a tablespoon of water and stir into the strawberry mixture. Cook until thickened then remove from heat.
- Gently swirl some of the strawberry mixture into the cheesecake filling.
- Bake for 55-65 minutes, until the center is slightly jiggly. Cool completely and refrigerate for at least 4 hours or overnight.
- Spread the remaining strawberry topping over the cheesecake and garnish with fresh strawberry slices.
Notes
Make sure your cream cheese is softened to room temperature for a smooth filling. Store leftovers in the refrigerator for 3 to 5 days.
