Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1 1/2 tablespoons granulated sugar
  • 5 tablespoons butter, melted
  • 2 1/2 cups sliced strawberries
  • 1/2 cup granulated sugar
  • 24 ounces cream cheese, room temperature
  • 1 1/4 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup full-fat sour cream
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and line the sides with a 3-inch strip of parchment paper.
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared pan, then place it in the fridge or freezer to set.
  3. In a saucepan over medium heat, cook the sliced strawberries and sugar for 10-13 minutes until soft, then blend into a smooth puree and set aside to cool.
  4. In a large mixing bowl, beat the cream cheese until smooth. Add sugar and vanilla, mixing until combined. Beat in eggs one at a time, add sour cream and heavy cream, mixing just until smooth.
  5. Wrap the outside of the springform pan with 2 layers of foil to prevent water from leaking. Pour cheesecake batter over the crust.
  6. Pipe the cooled strawberry puree onto the batter in a swirl pattern and gently swirl with a skewer.
  7. Bake in a water bath for 1 hour and 25 minutes or until edges are set. Cool in the oven with door ajar.
  8. Refrigerate for at least 8 hours or overnight to set completely. Slice and serve!

Notes

Ensure cream cheese is at room temperature for easier mixing. You can use frozen strawberries if fresh ones are unavailable.
