A delicious dessert that combines rich cheesecake with sweet strawberry flavors, perfect for any occasion.

- 2 cups (200g) graham cracker crumbs
- 1/4 cup (50g) granulated sugar
- 1/2 cup (115g) melted butter
- 3 (8-oz) packages (680g) cream cheese, softened
- 1 cup (200g) granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup (120ml) sour cream
- 1/4 cup (60ml) heavy cream
- 1 cup (150g) fresh strawberries, blended into puree
- 1/4 cup (50g) sugar (for the swirl)
- 1 tbsp cornstarch (for the swirl)
- 1 tbsp lemon juice (for the swirl)
- 1/2 cup (75g) fresh strawberries, blended (for the glaze)
- 2 tbsp sugar (for the glaze)
- 1 tbsp water (for the glaze)
- 1/2 tbsp cornstarch (for the glaze)
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press the mixture firmly into a 9-inch springform pan and bake for 10 minutes. Set aside to cool.
- In a saucepan over medium heat, cook strawberry puree, sugar, lemon juice, and cornstarch until thickened (about 5 minutes). Set aside to cool.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing after each addition. Stir in vanilla extract, sour cream, and heavy cream until well combined.
- Pour half of the cheesecake batter over the crust. Drizzle half of the strawberry swirl over the batter and use a toothpick to create a marbled effect. Add the remaining batter and repeat the swirl technique on top.
- Bake for 50-60 minutes, or until the center is slightly jiggly. Turn off the oven and let the cheesecake sit inside with the door slightly open for 1 hour.
- Chill in the fridge for at least 4 hours (preferably overnight).
- In a saucepan, cook strawberry puree, sugar, water, and cornstarch over low heat until thick. Let cool slightly, then pour over the chilled cheesecake.
Notes
Top with fresh strawberries and whipped cream. For best results, chill overnight.
