Delicious individual servings of classic strawberry shortcake made easy with layers of cake, strawberry sauce, and whipped topping.


Ingredients

  • 1 lb strawberries, fresh or frozen
  • 1/4 cup granulated sugar
  • 4 oz cream cheese, cold
  • 1/4 cup powdered sugar
  • 2 tsp vanilla extract
  • 1 cup heavy cream
  • 1/2 cup fresh strawberries, diced

Instructions

  1. Prepare the Vanilla Cake: Crumble the cooled cake into small pieces and divide evenly into 28 2-ounce cups, filling each about halfway.
  2. Make the Strawberry Sauce: Combine strawberries and granulated sugar in a saucepan and cook over medium-low heat for about 15 minutes until softened. Let cool.
  3. Prepare the Cream Cheese Whipped Cream: Beat cream cheese and powdered sugar until smooth. Add vanilla extract and gradually incorporate heavy cream, whipping until stiff peaks form.
  4. Assemble the Dessert Cups: Spoon strawberry sauce over cake crumbs in each cup, top with whipped cream, and garnish with diced strawberries.
  5. Chill and Serve: Cover cups and chill in the refrigerator. Serve immediately or within 2 to 3 days.
