Description

A classic dessert that combines sweet strawberries, fluffy whipped cream, and tender shortcake layers, perfect for special occasions or family treats.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup crushed graham crackers or vanilla wafers for coating
  • 2 cups heavy cream, very cold
  • 1/2 cup powdered sugar
  • 4 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar (optional, for macerating strawberries)
  • Fresh whole strawberries for decoration
  • A few tablespoons of crushed graham crackers or vanilla wafers for decoration

Instructions

  1. Preheat your oven to 400°F (200°C). Grease and flour two 8-inch round cake pans or line them with parchment paper.
  2. In a large bowl, whisk together the flour, 1/2 cup granulated sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. In a separate small bowl, whisk together the milk, egg, and 1 teaspoon vanilla extract. Add to the dry ingredients and mix until just combined.
  5. Divide the dough evenly between the prepared pans.
  6. Bake for 15-20 minutes, until golden brown. Let cool.
  7. If desired, toss sliced strawberries with 1/4 cup granulated sugar; let sit for 15-30 minutes.
  8. Beat heavy cream, powdered sugar, and 1 teaspoon vanilla until stiff peaks form.
  9. Spread whipped cream on the top of one shortcake layer, add sliced strawberries, then top with the second layer.
  10. Coat the sides with whipped cream and press crushed graham crackers or vanilla wafers onto the sides.
  11. Top with more whipped cream and fresh strawberries. Serve immediately or chill briefly.

Notes
