A classic dessert that combines sweet strawberries, fluffy whipped cream, and tender shortcake layers, perfect for special occasions or family treats.

- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cut into small pieces
- 1/2 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup crushed graham crackers or vanilla wafers for coating
- 2 cups heavy cream, very cold
- 1/2 cup powdered sugar
- 4 cups fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar (optional, for macerating strawberries)
- Fresh whole strawberries for decoration
- A few tablespoons of crushed graham crackers or vanilla wafers for decoration
Instructions
- Preheat your oven to 400°F (200°C). Grease and flour two 8-inch round cake pans or line them with parchment paper.
- In a large bowl, whisk together the flour, 1/2 cup granulated sugar, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- In a separate small bowl, whisk together the milk, egg, and 1 teaspoon vanilla extract. Add to the dry ingredients and mix until just combined.
- Divide the dough evenly between the prepared pans.
- Bake for 15-20 minutes, until golden brown. Let cool.
- If desired, toss sliced strawberries with 1/4 cup granulated sugar; let sit for 15-30 minutes.
- Beat heavy cream, powdered sugar, and 1 teaspoon vanilla until stiff peaks form.
- Spread whipped cream on the top of one shortcake layer, add sliced strawberries, then top with the second layer.
- Coat the sides with whipped cream and press crushed graham crackers or vanilla wafers onto the sides.
- Top with more whipped cream and fresh strawberries. Serve immediately or chill briefly.
