  • 2/3 cup heavy cream
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Prepare the Strawberries: Chop the strawberries into small pieces and blot them to remove excess moisture. Freeze the strawberries.
  2. Preheat the Oven: Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  3. Make the Cookie Dough: In a bowl, whisk together flour, baking powder, salt, and granulated sugar. Incorporate chilled butter until achieving a coarse crumb texture.
  4. Combine Wet Ingredients: In another bowl, mix heavy cream and vanilla extract, then stir into the flour mixture until a thick dough forms.
  5. Fold in Strawberries: Gently fold the chilled strawberries into the dough until evenly distributed.
  6. Shape the Cookies: Drop spoonfuls of dough onto prepared sheets, shape into balls, press down slightly, and top with extra strawberries and coarse sugar.
  7. Bake: Bake for about 16-18 minutes, or until golden brown.
