Description

A delightful dessert combining the fluffy texture of cake rolls and the creamy goodness of cheesecake, wrapped with fresh strawberries.


Ingredients

  • 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 tbsp milk
  • Powdered sugar (for dusting the towel)
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped cream or whipped topping
  • 1 1/2 cups fresh strawberries, finely chopped
  • 2 tbsp sugar (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 10×15-inch jelly roll pan with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, beat the eggs and granulated sugar until thick and pale. Mix in the vanilla and milk.
  4. Gently fold the dry ingredients into the egg mixture until just combined.
  5. Pour the batter into the prepared pan and bake for 10–12 minutes, or until the cake springs back when touched.
  6. Turn the warm cake onto a powdered sugar-dusted towel. Peel off the parchment carefully and roll the cake up using the towel. Let it cool completely.
  7. In a separate bowl, beat the cream cheese, powdered sugar, and vanilla until smooth. Fold in the whipped cream.
  8. Unroll the cooled cake gently and spread the cheesecake filling across the surface. Sprinkle the chopped strawberries on top and roll it back up carefully.
  9. Wrap the rolled cake in plastic wrap and chill in the refrigerator for 1–2 hours.
  10. Dust with powdered sugar or drizzle with strawberry sauce before slicing.

Notes

Store leftover rolls in the refrigerator wrapped in plastic wrap for up to 3 days. Unfilled rolls can be frozen.
