Description

Delicious and visually appealing dessert bars that combine the classic flavors of strawberry shortcake with creamy cheesecake.


Ingredients

  • 20 Strawberry Shortcake Oreo Cookies
  • 3 Tbsp unsalted butter, melted
  • 12 large strawberries, pureed
  • 16 oz. cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 Tbsp all-purpose flour
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 2 large eggs
  • 12 Strawberry Shortcake Oreo Cookies, divided

Instructions

  1. Preheat the oven to 325°F (163°C) and line an 8-inch square baking pan with aluminum foil.
  2. In a food processor, blend 20 Strawberry Shortcake Oreos into crumbs with melted butter and press into the bottom of the pan.
  3. Bake the crust for 10 minutes, then remove from oven.
  4. Puree the strawberries until smooth.
  5. Beat the cream cheese with sugar, flour, salt, and vanilla extract until smooth.
  6. Add the eggs one at a time, mixing well after each addition. Blend in the strawberry puree.
  7. Pour the cheesecake batter over the crust and crumble 8 Oreos over the top.
  8. Bake for 35-40 minutes until edges are golden and center is set but jiggly.
  9. Cool completely, refrigerate for at least 2 hours, and then lift out of the pan using the foil.
  10. Sprinkle the remaining 4 Oreos on top before slicing into squares.

Notes

Serve chilled or at room temperature, garnished with fresh strawberries or whipped cream.
