- 20 Strawberry Shortcake Oreo Cookies
- 3 Tbsp unsalted butter, melted
- 12 large strawberries, pureed
- 16 oz. cream cheese, softened
- 1/2 cup granulated sugar
- 2 Tbsp all-purpose flour
- 1/4 tsp salt
- 1 tsp vanilla extract
- 2 large eggs
- 12 Strawberry Shortcake Oreo Cookies, divided
Instructions
- Preheat the oven to 325°F (163°C) and line an 8-inch square baking pan with aluminum foil.
- In a food processor, blend 20 Strawberry Shortcake Oreos into crumbs with melted butter and press into the bottom of the pan.
- Bake the crust for 10 minutes, then remove from oven.
- Puree the strawberries until smooth.
- Beat the cream cheese with sugar, flour, salt, and vanilla extract until smooth.
- Add the eggs one at a time, mixing well after each addition. Blend in the strawberry puree.
- Pour the cheesecake batter over the crust and crumble 8 Oreos over the top.
- Bake for 35-40 minutes until edges are golden and center is set but jiggly.
- Cool completely, refrigerate for at least 2 hours, and then lift out of the pan using the foil.
- Sprinkle the remaining 4 Oreos on top before slicing into squares.
Notes
Serve chilled or at room temperature, garnished with fresh strawberries or whipped cream.
